Whole Chicken in the Crockpot
–This recipe is a great way to cook a whole chicken that you can eat as is, or use the chicken for multiple other recipes like the chili recipe we posted last!
1 whole chicken
½ onion diced
1 cup baby carrots (or any carrots)
2 celery stalks
½ cup chicken broth
Seasonings of your choice: salt, pepper, chili powder, paprika, garlic, etc.
Optional – ½ cup of white wine
Optional – 2 potatoes
This is by far one of the simplest recipes I know. The first step is to put the carrots, celery, and onion in the bottom of the crockpot, which is not turned on yet. Sometimes I will put some potatoes down too. Next dump the white wine and/or chicken broth into the crockpot. Now take your chicken out and clean out the inside and wash it down with water. After it has been rinsed put the chicken in the crockpot on top of all the veggies. Season the bird with whatever flavors you choose. If you are making the chili recipe with the chicken I would use some chili powder, garlic, salt, and pepper. Any combination of seasonings will work though, be creative and try some different things. After the chicken is seasoned put the lid on the crockpot and turn it on to HIGH. I keep it on high for about 45-60 minutes, and then turn it down to LOW for about 3-4 hours. The cook time will vary depending on the size of the bird. A meat thermometer helps to determine when the chicken is done. You can enjoy the chicken immediately, or let it cool and shred it up to make our chili recipe.
